This was part of our dinner tonight. It could have stood alone, except there are some serious meat eaters in this family. So everyone decided it is a side dish. It was delicious! We think it could go well in a burrito with some carnitas as well or a burrito bowl with some cheese and lettuce and meat of choice.
1 C. quinoa cooked in 2 C. chicken broth
1 can black beans, rinsed and drained
2 or 3 chopped tomatoes
1 chopped avocado
1 large handful or cilantro, chopped
1 T. lime juice or more to taste
Salt to taste
Bring quinoa and broth to boil, lower to simmer until liquid is taken up by quinoa. Stir in other ingredients. Enjoy!
